Creamy Chicken and Rice Soup
Ingredients:
1 tablespoon cooking oil
1 large carrot, chopped
1 celery stalk, chopped
1 medium chopped onion
1 clove garlic, minced
1/2 cup uncooked rice
3/4 teaspoon dried basil
1/4 teaspoon pepper
4 cups chicken broth
1/4 cup all-purpose flour
1 cup milk
1 pound cooked chicken, cubed
Directions:

In a large pot, heat the oil over medium-high heat. Sauté the carrot, celery, and onion until tender.

Add the garlic, and cook for about 1 minute.

Stir in the rice, seasonings, and broth, and bring to a boil.

Reduce heat, and simmer, covered, for about 15 minutes until rice is tender.

Mix the flour and milk until smooth, and stir into the soup.

Bring to a boil, and cook until thickened, about 2 minutes, stirring occasionally.

Stir in chicken, and cook until chicken is heated through.
