Meatball Casserole

Ingredients:

3 slices of bread

1/3 cup milk

1/2 cup onion, minced

2 tbsp butter

2 pounds ground beef

2 large eggs

Salt and pepper

24 onces marinara sauce*

2 cups mozzarella cheese, shredded (substitute w/ other cheese)

 

Directions:

  1. Preheat oven to 375ºF.

  2. Add your slices of bread with milk in a large bowl.

  3. Melt 1 tbsp of butter in a pan and add the onions. Cook on medium low until translucent, but not brown. Remove from heat and let cool.

  4. In your bowl of soaked bread add the rest of the meatball ingredients, including your cooked onions. Mix them together until bread is broken apart and meat is combined with the ingredients.

  5. Scoop the mixture into the shape of a ping pong ball. 

  6. Melt the remainder of the butter in the pan and cook the meatballs on medium high on all sides for around 2-3 mins, getting a good sear on all sides, then remove from heat and set aside. 

  7. Coat the bottom of a baking dish with a thin layer of marinara sauce. Place meatballs evenly into the baking dish & pour over the remaining marinara sauce on top. 

  8. Sprinkle the mozzarella cheese evenly over the baking dish. 

  9. Cover the baking dish with aluminum foil & bake for 18-20mins. 

  10. Increase the temperature to 425ºF, uncover the baking dish, and cook for an additional 5 minutes. 

 

*to make your own marinara sauce mix tomato puree, olive oil, garlic, and salt and pepper together
