Cacio e pepe

Ingredients:

7 ounces of spaghetti noodles

1 3/4 tbsp butter 

1 tsp ground black pepper

1/2 cup shredded parmesan

 

Directions:

  1. Cook the pasta for 2 mins less than the package instructs. While cooking melt the butter in a frying pan over low heat, add the black pepper and toast for a few mins.

  2. Drain the pasta keeping 3/4 cup of pasta water. Add the pasta & about 1/2 cup pasta water into the pan with butter & pepper. Stir the pasta briefly, & scatter the parmesan over evenly. Don’t stir the pasta, wait 30 secs for the cheese to melt before stirring together. Add the remainder of the pasta water, if needed to loosen the sauce.
