Spaghetti Aglio e Olio

Ingredients:

3/4 pound thin spaghetti

1/2 cup olive oil

8 garlic cloves, thinly sliced

Optional: red pepper flakes, grated parmesan and salt 

 

Directions:

  1. Cook the pasta for 2 mins less than the package instructs. Drain the pasta leaving 1 1/2 cups of pasta water.

  2. 4 mins after you add the pasta to the water, warm olive oil in a large pan over medium heat. Add garlic & cook for 2-3 mins, tossing regularly until the garlic is golden brown. 

  3. Carefully ladle the reserved pasta water to the pan. Bring to a simmer until the liquid reduces about 1/3. Add the  cooked pasta & toss around for a couple of mins. Turn the heat off, allow the pasta to rest, and serve with parmesan.
