Breaded Lemon Chicken

Ingredients:

2 large boneless skinless chicken breasts 

1/3 cup lemon juice

1 1/2 cups seasoned breadcrumbs

 

Directions:

  1. Slice the chicken breasts in half horizontally, so that you get 4 thin chicken breast pieces. Evenly pound out the chicken breasts till they are about 1/4” thick. 

  2. Heat 1/4 of the vegetable oil in a large pan over medium heat. 

  3. In a shallow bowl add the lemon juice. In a separate bowl add the breadcrumbs. Dip each chicken breast one at a time, into the the lemon juice then let sit for 2 minutes. Dip each chicken breast into the breadcrumbs and cover completely. Complete till all four chicken breasts are breaded. 

  4. Add 2 of the chicken breasts to the oil and fry till the bottoms are golden brown, which is about 4 minutes. Transfer to a paper towel and repeat to the remaining pieces of chicken and enjoy.
